Healthy Chicken Salad
Life is busy, so making time to cook can be tough. One of my favorite time-saving tricks when it comes to eating healthy is batch cooking your protein. This extremely effective tactic will help you save time and money—two things I’m sure we both can agree we could use more of.
The recipe below is a great example of how you can get the most out of a meal, by giving new life to my super easy baked chicken recipe. Start by making my baked chicken for dinner one night, then use the leftovers to prepare this delicious chicken salad for lunches, or even another dinner. This recipe is extremely versatile, and can be eaten alone, on a salad, or as a Sammy. It’s also kid-approved, making it perfect for kids’ lunches. 😉

Meat from ½ whole chicken, chopped and cooled
1/3 cup Primal Mayo (or another healthy mayo option)
2 tsp. Dijon mustard
½ tsp granulated garlic
½ tsp dried dill
¼ tsp garlic salt
¼ onion powder
¼ tsp ground pepper
2 green onions, chopped
4 pcs celery, chopped
3 dill pickles, chopped
1/4 cup of your favorite nut (walnuts and roasted almonds work great)
This one’s super easy. Just mix all ingredients together in a bowl and enjoy!
